This soup comes from Amazonia, where the river floods the lowlands for half the year, then recedes leaving really fertile land for growing crops. The dish combines two major products from the region, rice and cassava. The locals would make it using a hen with a pronounced, gamey flavour, but here it has been replaced by chicken, but you could use pork, venison or other wild game.
