Coming from the region of Tacna in the far south of Peru, this is a memorable chicken dish. In fact, every recipe from Tacna is distinctive because of the piquant seasoning used in the area’s cuisine. Mooli, or daikon, has a sweet flavour that is similar to peas but the texture is more like raw potato or pear. Mooli is often eaten raw, but in a recipe where it is cooked, such as this one, you can substitute a small young turnip if you can’t find mooli.
