Peruvians are very keen on dishes of bitesize, crispy fried morsels. They are normally called chicharrones, and although usually made of pork, chicken, fish or shellfish can also be prepared this way. This dish is normally accompanied by fried cassava and onion salsa, and is served on a single dish or platter for everyone to help themselves.
