Stews are very much part of the Peruvian kitchen, as home cooks enjoy following recipes and appreciate a clever combination of ingredients. This kind of stew, called seco (dry) to distinguish it from the soupy aguadito, contains potatoes, cassava, coriander, chilli and spices. It is served with rice and often with beans too, and with chilli sauce on the table for those who like extra heat.
