There were wild rabbits in the Americas before the Spanish arrived, but that population was added to by escaped rabbits brought as food. After escaping they multiplied so much that they populated the whole region, so for five centuries they have been eaten by Peruvians. A good way to enjoy rabbit is deep-fried (chicharrones de conejo), but it is normally eaten roasted, or in stews like this one.
