Beans are very popular in Peru and are eaten regularly. They feature in soups, stews, rice dishes like this one, and even desserts. It is said that tacu tacu, traditionally made with leftovers, has its origins in the kitchens of African slaves, but it also has similarities with the food of neighbouring countries. Tacu tacu is traditionally served with fried plantains (tajadas).
