Cassava originates from tropical America. It is said that the Maya first grew this tuberous plant for food, but it is much used by all the Amazonian tribes, who even brew an alcoholic beverage from it, called masato. There are around 160 varieties, adapted to different growing conditions. Cassava has been eaten in Peru for a long time, usually as an accompaniment but also in tasty recipes like this one.
