A locro is a kind of stew from the south of Peru (it is also found in Argentina, where fruits are added). There is a very large yellow squash in Peru, so big that it is carved up into pieces and sold by the kilogram in the markets. Called zapallo, it is soft and buttery and is used in many recipes, from soups to puddings. Butternut squash has been substituted here, and gives a delicious nutty flavour.
