The sweet potato probably originated in Central America. It is much used in Peru, where it is usually served boiled with savoury dishes such as cebiche or escabeche, or baked for a sweeter result. Fried sweet potato is indispensable for a good chicharrones sandwich, its natural sweet flavour is also delicious in desserts. This purée is an excellent accompaniment for roasted meats such as pork or turkey.
