These cookies are a classic Peruvian treat. They are really popular, and every bakery, delicatessen, and sweet shop has its own version of the recipe. Even individual families have their own particular recipes. The cookies are made in all sizes - some as large as a plate - and filled with different kinds of manjar blanco, the Peruvian name for dulce de leche. Alfajores are eaten with great enjoyment all along the coast of Peru.
