These little golden dough balls are another great example of the versatility of cassava as a cooking ingredient. Pão de queijo can be found in the majority of bakeries, snack bars, grill houses and restaurants in Brazil.

  • 500 g/ lb/5 cups sour cassava starch (polvilho azedo)

Method

1 Preheat the oven to 200°C/400°F/Gas 6. Carefully put the sour starch into a bowl; it is very fine and easily blows away. Add the salt.

2 Heat the milk and oil in a pan until it reaches boiling point. Just as the boiling liquid starts to rise, remove from the heat and pour it
