Name: Spicy Tomato Soup

Ingredients: 2 tablespoons red wine vinegar; 1 teaspoon sea salt; 2 celery stalks, trimmed and finely chopped; 1 small carrot, peeled and finely chopped; 1.5 kg (3 lb 5 oz) very ripe tomatoes, peeled, deseeded and chopped; 125 ml (4 fl oz/½ cup) extra virgin olive oil; 1 handful coriander (cilantro) leaves; 1 handful flat-leaf (Italian) parsley, chopped; ½ small red onion, finely chopped; 4 garlic cloves, finely chopped; 1 tablespoon chopped coriander (cilantro) leaves; freshly ground pepper; 2 teaspoons ground cumin; ½ teaspoon hot chilli powder; 1 teaspoon smoked paprika

This soup is easy to make and tastes great. Don’t let the fact that you have to make a little paste stop you. You can also add a couple more spices if you wish to increase the complexity of the flavour. If you want, you could add chicken stock instead of water – it may add a little more body, but not m
