We have a few different whiting here in Australia, each one a premium eating fish. In Sydney we would consider the sand whiting king; in Melbourne and Adelaide they would not consider eating anything bar the King George whiting. The truth is they are both wonderful fish and great in this dish – just choose whichever is freshest.
