  • 1 egg yolk
  • 1 tsp balsamic vinegar
  • 1 tsp sherry vinegar<

Method

Place the yolk in a mixing bowl with both vinegars and the chopped truffle, if using. Whisk until a whitish foam appears, then slowly add all the oils.

Season to taste and store in a plastic airtight container for up to 2 days.
