The pineapple, originally native to South America, is now widely cultivated in Southeast Asia. The ones you find in Hong Kong are usually from Thailand or the Philippines. Although pineapple is sold as fruit to be eaten ripe or pickled in a mild brine as a snack, cooked pineapple is also widely used in Hong Kong recipes. This inexpensive family dish is typical of recipes in which pineapple is combined with meats. The tart, sweet taste of the fruit complements the rich, tasty chicken wings.
