This soup is a hearty, Italian inspired minestrone soup with added nutrients from the sorghum grain, instead of rice or pasta. With a nutty flavour and chewy texture, this small ancient white pearl has the added benefits of being gluten-free. It takes longer to cook than other ancient grains, but this winter warmer is well worth the wait. Use whatever vegetables you have in your vegetable rack and any other legumes you wish to add.
