Method
- Combine the pectin with half the sugar.
- Pour the water into a saucepan and whisk in the rest of the sugar.
- Bring to a boil, add the glucose syrup, and bring back to a boil.
- Add the pectin and sugar and, whisking continuously, cook for 2 minutes.
- Skim off any impurities from the surface, if necessary, and let cool completely.
