I am not entirely sure how this No. 2 mousse recipe differs in composition and usage from the preceding recipe. But I tossed a coin and went with this one and it worked very well—though as with all chocolate mousse recipes, it did generate a lot of washing up! It seemed a shame to use only one of the two egg yolks, so I added both, but it would probably have been a bit lighter without the second one.
