This is one of my favourite desserts – I just love the intriguing contrast between the cold, creamy custard and the brittle, hot layer of caramelized sugar. For me, crème brûlée is particularly delicious served with a fruit purée – raspberry and blackberry are both sensational. They bring the perfect acidity needed to balance the richness – just as you’re being lulled into luxury by the sugar and cream, a sharp burst of summer fruit explodes in your mouth. It’s a wonderfully decadent treat.
