The beautiful Ardèche region of France is the home of the sweet chestnut, and its main town, Privas, is the capital of the world’s marron glacé production. In this remote and mountainous area, the chestnut has always played a major part in domestic life. Chestnut trees were once known as bread trees because even the bread was made with chestnut flour. This warming chestnut soup is a good restorative on a cold winter evening.
