When I am in France, I cook wild mushrooms, especially cèpes, in this way. If there is no time to search meadows and woodlands you can often find wild mushrooms being sold on a market stand, collected by the standholder first thing that morning. In other countries, where we are less familiar with wild fungi, small cultivated mushrooms make a delicious filling.
