I created this recipe for cooking on the barbecue in the garden of our French gîte. As soon as I get back from the market with the fish I start to prepare the dish, leaving the kebabs to marinate in the refrigerator until we are ready to cook them for mid-day lunch or in the evening, as part of a long leisurely meal spent with local friends and local wine.
