The saupiquet, whose name probably derives from sauce piquant, is a classic dish from the Morvan hills in southwest Burgundy. This beautiful area of rolling countryside is famous for its fine cattle, cheese and cream. The piquant sauce in this dish is flavored with juniper berries and wine vinegar and is finished with cream; it is invariably served with ham.
