The mountainous Auvergne region of central France has many simple and excellent recipes for cooking game. This way of grilling rabbit works particularly well over a wood fire, but the rabbit can be cooked on a barbecue, or even in the oven, instead.

Ingredients

  • 1 oven-ready rabbit, cut in two lengthwise
  • 8 tablespoons butter, melted
  • 6 short branches

Method

Brush melted butter over a sheet of double thickness foil and lay half the rosemary on it. Brush the rabbit all over with melted butter and season with salt and pepper. Place it on the rosemary and cover with the remaining branches. Gather the foil to enclose the rabbit and rosemary and place the package on a grill or a metal sheet over a wood fire or barbecue.
