This is a cool and elegant little cheese dish which is excellent served for lunch or as a first course to a light meal. Use the herbs that you most enjoy. I use a mixture of whatever herbs are in peak condition in my garden at the time. If you use unflavored gelatine instead of aspic powder, use strained homemade chicken stock instead of cold water for a richer taste.
