Fromage fort is a preserved cheese made by mixing well-seasoned goat cheese with grape spirit. Different regions in the South of France have their own interpretation of this ancient preparation and some families still use recipes handed down for generations. Fromage fort is usually made in a special pottery jar and it is traditional to leave a little of the cheese from the previous batch at the bottom of the jar before the newly prepared cheese is spooned on top.
