Jalousie is the French name for the louvred wooden shutters still to be seen on many houses in the South of France. A sweet pastry with a lid cut into narrow strips has also been given the name because of its shape. I have adapted the idea to make a flat loaf, filled with vegetables and herbs, that is good for taking on a picnic.

  • 5 tablespoons olive oil
  • 1 small onion, chopped
  • 1 clove

Method

To make the filling, heat 2 tablespoons of oil in a heavy skillet and sauté the onion and garlic until soft and transparent. Add the tomato, peppers, and zucchini and cook, stirring occasionally, for 5 minutes. Stir in the remaining vegetables and cook for 4 minutes. Remove from the heat, add the he
