The delicate flavor of tender snow peas is brought out when they are cooked ‘in the French style’ with butter, lettuce, and chives.

Ingredients

  • 8 ounces snow peas
  • 3 tablespoons butter
  • a pinch</

Method

Trim the ends from the snow peas. Melt all but a tablespoon of the butter in a pan and stir in the snow peas. Add the sugar and salt, cover the pan, and cook over moderate heat for 5 minutes.

Stir in the lettuce, chives, and scallions, gently tossing the vegetables together until the lettuce
