La crique is a classic potato dish from the Ardèche – a variation on a type of coarse potato pancake that is to be found all over Europe. It usually accompanies roast or grilled meat, but when times are hard, the dish is served on its own.

There are several versions of la crique; some are so plain they do not even include garlic or herbs; others are very rich with the addition of eggs and cream. But this recipe with garlic and parsley seems to be the most popular.
