Summer savory, sarriette, is a traditional flavoring for fava beans in France, but it has a peppery, slightly bitter taste and it is wise to be cautious with the amount you use at first.

Ingredients

  • 12 ounces young fava beans, or lima beans, shelled
  • a few sprigs of fresh summer savory

Method

Steam the fava or lima beans, or cook them in boiling salted water, with half the savory until tender, then drain.

Melt the butter in a saucepan and add the beans and the remaining savory, finely chopped. Mix the crème fraîche or sour cream with the egg yolk and add to the pan. Cook, stirring, for a few minutes until the cream thickens. Do not allow the sauce to boil or it will c
