In France, this excellent salad of bell peppers is usually prepared with red peppers only, but I quite like the garish look of red and yellow peppers together that is reminiscent of a painting by Van Gogh. These days there is a good choice of green, red, yellow, orange and even purple bell peppers, but I usually select just one or two kinds. On the whole the lighter, brighter colors taste sweeter than the darker ones.
