Mesclun is the Provençal name for a mixture of small salad leaves. It usually comprises curly endive (endive frisée), red radicchio, escarole (scarole), lamb’s lettuce (mâche), oak leaf lettuce (feuilles de chêne), small leaves of romaine lettuce (laitue romaine), and some sprigs of herbs such as chervil, flat-leaf parsley and arugula (roquette).
