There are two types of samphire: the marsh samphire and the rock samphire, both of which are sea vegetables and grow along the coasts of Northern Europe. Some of the best samphire is to be found in the UK on the Norfolk coast from June to September. It’s funny to think that it used to be called “the poor man’s asparagus”, because it’s so delicious. Make sure you get some good-quality crab meat from your fishmonger rather than using canned, as they are a world apart when it comes to flavour.
