This vegan version of a traditional Mexican stew is fragrant, fun, and delicious enough to serve company. I like to make it in a large slow cooker and set it out with warm tortillas and bowls of accompaniments for everyone to add according to their own taste. My favorite garnishes are avocado, cilantro, and pepitas, but you can also put out bowls of salsa, shredded lettuce, sliced radishes, and vegan sour cream. To make this gluten-free, instead of seitan, you may use
