Sloppy Joes are a favorite in my house, so I like to make a big pot and then portion and freeze it for quick meals. In this recipe, the “meatiness” comes from a combination of lentils, seitan, and mushrooms. If you’re not a fan of any one of them, just leave it out and add an extra amount of the others.
