Whole barbecued peameal is a little out of the ordinary, but it makes for a juicy and tender sandwich. A delicious Canadian treat, eh!

Ingredients

3 lb whole peameal pork loin

Method

Preheat the grill to medium.

Place the whole peameal loin on the grill and cook, covered, rotating and turning periodically, until the center reaches a temperature of 160°F (71°C), about 75 minutes.

While the peameal is cooking, purée the salsa, brown sugar, and vinegar and simmer in a saucepot until it becomes a glaze consistency. Brush half this glaze onto the peameal during t
