Sourdough rye is one of the most popular breads in Poland. It is sometimes made with added yeast or wheat flour, which makes the flavor less intense. In my hometown of Rzeszów, there is an old bakery called Nawłoka, where they bake it my favorite way, with just rye flour and zakwas (rye sourdough) starter.
