This is one of my favorite ways to prepare the nutritious Brussels sprout. Brussels sprouts are dense and need serious cooking in order to make them palatable—when whole, that is. When you tenderize them mechanically—that is, by slicing them thinly—you can cook them quickly so that they have a fresher, more dynamic flavor, and they’re done in a snap.
