This is enough to cure about 30 pounds/13.5 kilograms of bacon. It’s a good mix to put together if you regularly cure bacon. It keeps indefinitely.


  • 1 pound/450 grams kosher salt (a scant 2 cups Morton’s kosher salt, for example)
  • 8 ounces/225 grams (1 scant cup) sugar
  • 2 ounces/56 grams pink curing salt (10 teaspoons)


Mix all the ingredients and store in a zip-top plastic bag or airtight nonreactive container in a cool, dry place.
