Ground beef, flavored with pancetta, grated cheese, and aromatics, and bound with breadcrumbs and egg, may be cooked in a loaf (polpettone) or in individual patties (see Variation). Either way, the mixture is seared in oil and braised in the oven with stewed beans, cannellini all’uccelletto.
