  • 2 young partridge, plus livers
  • 2 tablespoons lemon juice

Method

Cut the partridge down the back to one side of the centre backbone, then cut away the backbone. Flatten out the birds and marinate for one hour in a mixture made from the lemon juice, honey, soy sauce and thyme. Heat the grill and grill them for 8 minutes breast-side down, turn over, smear the breasts with half the butter and grill for another 8 minutes or until just cooked. Adjust the distance
