Gerry Bramley asked me to cook a dinner for the Prince of Wales Trust once, and he chose as the venue James Percy’s stylish Lodge at Linhope, in the middle of England’s Northumbrian Hills. James joined us in the kitchen for scraps and told me that this is how his wife treats partidge breasts, and an excellent idea it is, too. The sauce I offer here is my own.
