The Circassians are from the Caucasus which is the birthplace of the pheasant. Although this dish is usually made with chicken, it struck me that they had pheasant before they had chicken, and it works very well. This is a good dish for using up old cock birds; as I have been heard to say there is a lot of good in an old cock. If you prefer you can poach the pheasant for less time, carve it, and pour the sauce over the slices.
