Carpaccio of Grouse

I was shooting at Copstall in Wiltshire, England, the lovely estate that Paul van Gilsengen and his partner Caroline Tisdale have returned to wonderful organic conditions with wild bison, boar, and hens that see off the deer hounds. After a splendid day’s shooting Max Hastings remarked that he loved raw grouse, so Michel Roux and I leapt at this and Andy
