This is a good dish to make if you have a mixed bag of different duck.
Season the ducks and roast in a preheated oven at 425°F for 30-40 minutes, until they are browned and tender. When they are cool enough to handle, quater the ducks, and cut away the rib cages.
Transfer all the roasting juices i
