Name: Raised Hare Pie
Yield: Serves 4
Ingredients: 12 ounces hare, cut into small pieces (about 2½ cups); handful dried cherries or cranberries (soaked in cold tea to swell); beaten egg to glaze; salt and pepper; 4 dried apricots; 1¼ cups game stock; 1 onion; nutmeg; mace; 1 pig’s foot or 2 level teaspoons gelatin; 1 cup milk and water mixed, or plain water; ½ pound pie veal; ½ cup lard; ½ pound cooked ham; 3⅓ cups all-purpose flour; 1½ teaspoons salt

A good raised hare pie was usually eaten to celebrate the feast of the pagan goddess of spring whose name was Oestre and her symbols of fertility were the egg and the hare. Ring any bells? Christianity steals most things and the hare has now become the Easter bunny. There are still parts of the country where the tradition continues so here is a recipe for you to honor her, too.
