One year Johnny made some delicious confit from some geese that had not been sold before Christmas. It was a major labor of love and his friends got large jars. There comes a time when the contents are severely reduced and you want to finish it up. This is what I did and it is very good. Don’t open a jar specially, but if you have some around and have caught some trout, I recommend it.
