I think it was Evelyn Waugh who said he never remembers the original dish but leftovers are lovely. This dish comes from the Roman cook Apicius and, I suspect, is the first recipe for lasagne, but it is made with crêpes. It is a curious dish, but very good for using up leftover game of any description. I usually make extra crêpes when I’m cooking, and freeze them for next time.
