If lamb makes a shepherd’s pie and beef makes a cottage pie, venison must equal stalker’s pie. Shepherd’s pie was a traditional use of the leftover Sunday roast on Tuesday, and the invention of the metal meat grinder in Victorian times made the dish more popular. My sister Heather first added port or Scotch to the white sauce with which she bound her version, and a great improvement it is.
