Game Paella

Spain abounds with paella type rice dishes made with whatever the local ingredients are. It is also a great country for game. My mother and I once visited a place called Puebla Sanabria, northwest of Salamanca surrounded by a valley of hills with a lake in the midst of the dry land and a castle my mother yearned to buy.
